When I visited Japan a few weeks ago I became addicted to Matcha. Matcha (green tea powder) is everywhere in Japan, they have shops selling only Matcha products, ranging from the common powder to ice cream, biscuits, and even chocolate. It is impossible to miss it!
Matcha has so many health benefits: not only is it packed with antioxidants, it is also rich in fibre, chlorophyll, and vitamins, as well as zinc and magnesium. A cup of Matcha contains as many antioxidants as 10 cups of normal leaf green tea. It helps detoxify your body naturally and boosts your metabolism to help you burn more calories! If this wasn’t enough, Matcha also helps calm your mind and relax your body. It enhances your mood and even helps to concentrate. It is such an easy way to add something healthy into your everyday diet.
Once back home, knowing all that, I decided I wanted to create something delicious with that special ingredient. Being a fan of protein balls, I came up with the idea of mixing Matcha and coconut. So here is the recipe of my Matcha & Coconut protein balls. I hope you enjoy!
Serves: About 12 balls
2 tsp Matcha powder
12 Medjool dates – pitted
1 to 2 Tbsp coconut oil
3/4 cup almond – raw
1/4 cup pistachio – raw
1/2 cup shredded coconut
+ 1/2 cup shredded coconut for topping
- Blend the almonds and pistachio in a food processor until you get fine crumbs.
- Blend the dates in a food processor until you get small pieces.
- Combine the nuts and dates together and add the Matcha powder and the coconut oil. Mix until everything is well combined. The mixture should be sticky enough to hold together, but not too sticky otherwise you won’t be able to roll it into balls. If the mixture is too sticky, add a tiny bit more Matcha powder. If it’s too dry, add a touch more coconut oil.
- Roll the mixture into 12 balls and coat them in the shredded coconut.
Leave them in the fridge to set. Store in the fridge in an airtight container for up to a week.
